Terroir Area Information: Terroir: Hoshino, Yame, Fukuoka, Japan Plant Information: Albino tea: the result of a natural mutation turning the leaves yellowish-white; also called golden Sencha, with an exceptionally high amino acid content. Cultivar origin: created by tea master Akihito Takaki from seeds of the mutated plants and named Hakusei (“White Star”) after the village of Hoshino, whose own name means “Star Field”. Cultivation Information: Growing conditions: the mountain valleys of Yame are cooler, so the harvest falls about a month later than in lower, flatter growing areas, and Sencha cultivation is a rarity in Yame.
