Terroir Area Information: Terroir: Rhodope mountains, northern Greece — karst slopes rich in flora and fauna, shared with cistus and oregano. Plant Information: Seed provenance: the wild plant is protected, so growers take only its seed, germinated under the Institute of Agriculture of the University of Thessaloniki, and plant the seedlings into organically cultivated soil, preserving biodiversity. Also known as: shepherd tea, or ironwort; one of some 150 Sideritis species used for it.
